Moist and rich, yet so simple to make! This is a good cake to decorate for birthdays, parties, or the holidays, but it's fine to serve plain any time.

Modern Carrot Cake

Ingredients:

Combine first six ingredients, then add the remaining three. Mix well, and pour into a 13x9x2 (50 to 60 mins at 325F) or two 9 inch (40 mins at 325F) lightly greased and floured pans. (May also be used for cupcakes.) Cool well and frost with Vanilla Cream-Cheese Frosting.

Vanilla Cream-Cheese Frosting

Blend cheese, milk. Stir in sugar gradually; add salt, vanilla; blend well.
